Since the dawn of time, mankind has sought to extract scents from fragrant plants to heal, beautify and perfume himself. Today, perfumers commonly have access to several hundred natural raw materials from all five continents, leading to several thousand natural ingredients. These extracts, historical raw materials, have gained in importance in recent years in perfumery, food flavoring and cosmetics. They are mostly of plant origin, obtained from various plant parts.
Initially highly empirical, extraction processes have evolved with scientific advances for several reasons: the desire for novelty and innovation, but also the need to produce ingredients in a rational way (mainly to reduce the use of fossil and/or regulated solvents, and to save energy). New extraction techniques are now available for the flavor and fragrance industry.
While some of these techniques have already proved their worth, others are still in the making. A complete overview of these new extraction methods and their level of maturity will be presented, illustrated by concrete examples and applications, in order to measure their interest through a series of case studies.applications, in order to measure their interest through the academic and industrial visions that converge on certain subjects and oppose each other on others.
